Twentieth Century Wine Caves

The Jarvis Wine Cave project was started in 1991 when Condor Earth Technologies Inc. joined with Alf Burtleson to design and construct a 45,000 sq ft underground winery and cave space. The entire Jarvis winery is actually underground inside the tunneled areas, with cave spans exceeding 85ft (25.5 m) in width there is plenty of room for all aspects of producing wine: including crushing, fermentation, bottling, lab, office, barrel storage, marketing, and hospitality areas. You can even take a tour as caves are open for public but by appointment only.
